This lentil soup recipe is proof that humble ingredients can make something truly special. Red lentils, onion, carrot, cumin and a squeeze of lemon simmer together into a golden, velvety soup that is nourishing, inexpensive and ready in about 40 minutes. It is inspired by the Turkish-style lentil soups served across the Middle East, with a gentle warmth that also feels familiar to anyone who grew up on daal.

What makes this version stand out is the finishing touch: a sizzling drizzle of butter or olive oil infused with paprika and dried mint, poured over each bowl just before serving. It adds colour, aroma and a little richness that lifts the whole thing.

Reasons to Make It Tonight

Red lentils need no soaking and break down quickly, so the soup thickens naturally without cream or flour. It is filling and high in plant protein and fibre, naturally vegan if you use oil, and costs very little to make for a whole family. Most of the ingredients are probably in your cupboard right now.

It also reheats beautifully, which makes it perfect for packed lunches or Ramadan suhoor and iftar. Many families serve it as the first dish when breaking the fast, as it is gentle on an empty stomach.

What You Need and Why

  • Red lentils (masoor daal): split red lentils cook down to a creamy texture. Rinse them until the water runs clear to remove dust and excess starch. Yellow moong daal is a good substitute.
  • Onion, carrot and garlic: the flavour base. Carrot adds natural sweetness and a lovely orange colour. A small potato can be added for extra body.
  • Tomato paste: one tablespoon deepens colour and flavour.
  • Spices: ground cumin is essential. Paprika, a pinch of chilli flakes and black pepper add warmth without strong heat.
  • Stock or water: vegetable or chicken stock adds depth, but well-seasoned water works fine.
  • Lemon: squeezed in at the end, it brightens the earthy lentils. Do not skip it.
  • For the topping: butter or olive oil, paprika and dried mint.

How to Cook It

Soften the vegetables

Warm the oil or butter in a heavy pot over medium heat. Add the onion and cook for 6 to 8 minutes until soft and lightly golden. Add the carrot and garlic and cook for a few minutes more. Take your time here: a properly softened base makes a sweeter, rounder soup.

Toast the spices and paste

Stir in the tomato paste, cumin, paprika and chilli flakes and cook for one minute, stirring. Toasting the spices in fat releases their aroma, and cooking the tomato paste removes its raw edge.

Simmer the lentils

Add the rinsed lentils and stock, and bring to the boil. Skim off any foam, reduce the heat and simmer, partly covered, for 20 to 25 minutes, stirring occasionally so the lentils do not catch on the bottom. They are ready when completely soft and starting to fall apart.

Blend and adjust

Blend the soup with a stick blender until smooth, or leave it slightly rustic if you prefer. Lentil soup thickens as it stands, so add hot water until it reaches a pourable consistency. Season with salt and pepper and stir in the lemon juice.

Make the sizzling topping

Just before serving, melt the butter in a small pan until foaming. Take it off the heat and stir in the paprika and dried mint. It will sizzle and turn a beautiful red. Spoon a little over each bowl.

Tips for the Best Lentil Soup

  • Rinse the lentils well; it reduces foam and gives a cleaner taste.
  • Season towards the end, as stock can be salty and lentils absorb flavour as they cook.
  • Do not burn the paprika in the topping. Take the pan off the heat before adding it.
  • Add lemon gradually, tasting as you go, until the soup tastes bright but not sour.
  • Make a double batch; this lentil soup recipe freezes extremely well.

Variations

Desi daal soup: add a teaspoon of turmeric and garam masala, and top with a tarka of cumin seeds, garlic and dried red chillies fried in ghee.

Coconut lentil: replace some of the stock with coconut milk and add ginger and a little curry powder.

Chunky vegetable: use brown or green lentils, which keep their shape, and add celery, potato and spinach. Do not blend.

Smoky: use smoked paprika and stir in a handful of chopped greens at the end.

Serving and Storage

Serve hot with a lemon wedge, the sizzling paprika butter and a sprinkle of fresh parsley or coriander. Warm flatbread, crusty bread, toasted pitta or naan are ideal for dipping. A simple salad of cucumber and tomato on the side completes the meal.

Cool the soup and refrigerate in a covered container for up to 4 days, or freeze in portions for up to 3 months. It thickens a lot in the fridge, sometimes almost setting, so add water or stock when reheating and stir often over medium heat until steaming hot throughout. Taste again after reheating; a fresh squeeze of lemon brings it back to life.

Frequently Asked Questions

Do I need to soak red lentils?

No. Red lentils cook quickly without soaking. A good rinse is all they need.

Can I use brown or green lentils?

Yes, but they take longer to cook, around 35 to 45 minutes, and stay firmer. The soup will be earthier and less smooth.

Why is my soup too thick?

Red lentils absorb a lot of liquid and keep thickening as they cool. Simply add hot water or stock until it is the consistency you like.

Is this lentil soup recipe vegan?

It is if you use vegetable stock and olive oil instead of butter for the topping.

Can I make it in a pressure cooker?

Yes. Sauté the base, add lentils and stock, and cook under pressure for about 6 to 8 minutes, then release naturally and blend.
