Crispy skin, a buttery coating and a bright hit of citrus and cracked pepper: these lemon pepper chicken wings deliver all of it without a deep fryer. The wings are baked until the skin is shatteringly crisp, then tossed in a sauce of melted butter, fresh lemon zest, lemon juice and plenty of coarse black pepper.

The trick that makes this version stand out is a light dusting of baking powder before baking. It dries the skin and helps it blister and crisp in the oven, so you get wings that taste fried but are far less messy to make. They are perfect for match nights, parties or a fun family dinner.

Why These Wings Are a Winner

Many lemon pepper seasonings are mostly salt with a little dried lemon. Here you build the flavour from fresh ingredients, so the lemon tastes zesty and real rather than artificial. The butter sauce clings to the crisp skin, and the pepper gives gentle heat that even children usually enjoy.

  • Oven-baked or air-fried, no pot of hot oil needed.
  • Fresh, tangy flavour that is a change from the usual barbecue or buffalo wings.
  • Simple ingredient list with no special equipment.

What Goes into Them

  • Chicken wings: buy them already split into flats and drumettes to save time, or cut whole wings at the joints yourself and freeze the tips for stock.
  • Baking powder: not baking soda, which tastes soapy. Choose an aluminium-free brand if you can, as some people notice a metallic taste otherwise.
  • Salt and garlic powder: season the skin before baking.
  • Butter: the base of the sauce. Ghee works and has a nutty flavour; olive oil is a dairy-free option.
  • Lemons: you need both the zest, which holds the fragrant oils, and the juice, which brings acidity.
  • Black pepper: freshly cracked and coarse. Pre-ground fine pepper lacks the aroma and texture that define this dish.
  • Honey (optional): a teaspoon smooths out the sharpness for those who like a hint of sweetness.

From Raw to Crispy: The Process

Dry the wings thoroughly

Moisture is the enemy of crispy skin. Pat the wings very dry with kitchen paper. If you have time, leave them uncovered on a rack in the fridge for a few hours or overnight; the skin dries further and crisps even better.

Coat lightly

Toss the wings in a large bowl with the baking powder, salt and garlic powder until every piece has a thin, even dusting. Too much baking powder can leave a bitter taste, so stick to the measured amount.

Bake in two stages

Arrange the wings skin side up on a wire rack set over a foil-lined tray. The rack lets hot air circulate underneath and lets the fat drip away. Bake first at a lower temperature, 120°C (250°F), for 30 minutes to render the fat, then increase to 220°C (425°F) for another 40 to 45 minutes until deeply golden and crisp. Wings are safe at 74°C (165°F), but they become more tender and pull away from the bone more easily when taken to around 80 to 85°C (175 to 185°F).

Toss in the lemon pepper butter

While the wings finish, melt the butter in a small pan, add the lemon zest, black pepper and a pinch of salt and warm for one minute to bloom the pepper. Take it off the heat and stir in the lemon juice and honey. Toss the hot wings in the sauce in a big bowl right before serving so they stay crisp.

Tips for Crispy Lemon Pepper Chicken Wings

  • Do not crowd the rack. Space between the wings means better airflow and crispier skin.
  • Toss, do not drench. Use just enough sauce to coat; serve extra on the side.
  • Zest before juicing. It is much easier to zest a whole lemon than a squeezed one.
  • Serve straight away. Sauced wings slowly soften as they sit, so toss them at the last minute.

Other Ways to Cook and Flavour Them

  • Air fryer: cook the coated wings at 200°C (400°F) for about 22 to 25 minutes, shaking the basket every 8 minutes, then toss in sauce.
  • Deep fried: fry at 175°C (350°F) for 10 to 12 minutes until golden and cooked through, then sauce.
  • Dry rub style: skip the butter and toss the baked wings in a mix of lemon zest, cracked pepper, salt and a little garlic powder for a drier finish.
  • Lemon pepper with chilli: add a pinch of red chilli flakes or a little chaat masala for a desi twist.
  • Garlic parmesan lemon: add grated parmesan and fresh parsley to the tossed wings.

Serving Ideas

Serve lemon pepper chicken wings with celery and carrot sticks, a cool yoghurt or ranch-style dip, and a pile of fries or potato wedges. They also work alongside coleslaw, corn on the cob or a crunchy green salad. For a party platter, put out two or three dips such as garlic mayo, mint raita and a spicy chilli sauce, plus plenty of napkins and extra lemon wedges.

Leftovers and Reheating

Store leftover wings in an airtight container in the fridge for up to three days. To bring back the crunch, reheat in a 200°C (400°F) oven or air fryer for 8 to 10 minutes until piping hot throughout. The microwave makes the skin soft, so avoid it if possible. You can also bake the wings ahead without sauce, cool, refrigerate, and then crisp and toss them in fresh sauce just before guests arrive.

FAQs

Why baking powder and not cornflour?

Baking powder raises the pH of the skin, which helps it brown and crisp. Cornflour gives a more coated, crunchy shell. Both work; baking powder gives the most fried-like skin.

Can I use bottled lemon juice?

Fresh lemons give a far better flavour, and you need the zest anyway. Bottled juice works in a pinch.

How many wings per person?

As a main course, plan around 8 to 10 pieces per adult. As a starter, 4 to 6 pieces is usually plenty.

Can I prepare lemon pepper chicken wings ahead?

Yes. Season and dry them in the fridge up to a day before, then bake when needed. Make the sauce fresh for the brightest lemon flavour.
