You do not need a vertical rotisserie to get juicy, deeply spiced shawarma. This chicken shawarma recipe uses boneless thighs marinated in yoghurt, lemon, garlic and warm spices, then roasted hot and fast so the edges char while the inside stays tender. Slice it thin, pile it into warm flatbread with garlic sauce and pickles, and it tastes remarkably close to the street-food version.

The secret is a well-balanced spice blend and a high oven. Together they create those crispy, caramelised bits that make shawarma irresistible, all from an ordinary home kitchen and a single baking tray.

What Makes This Shawarma So Good

Traditional shawarma is cooked on a spit, where layers of meat baste each other and the outside is shaved off as it crisps. At home we copy that effect in two ways: using chicken thighs, which have enough fat to stay moist under high heat, and finishing the sliced meat in a hot pan so every piece picks up crunchy edges.

  • Big, bold flavour from a homemade spice mix.
  • Marinate the night before and cook in under 30 minutes.
  • Great for feeding a crowd: set out the fillings and let everyone build their own wrap.
  • Leftovers make excellent rice bowls and salads.

The Ingredients, Explained

  • Boneless chicken thighs: the best choice for juicy shawarma. Breast can be used, but cook it for less time and slice it thinner so it does not dry out.
  • Plain yoghurt: tenderises the meat gently and helps the spices cling.
  • Lemon juice and garlic: provide the fresh, sharp backbone of the marinade.
  • Spices: cumin, coriander, paprika, turmeric, cinnamon, allspice and a little black pepper. Cinnamon and allspice give the warm, slightly sweet note people recognise in shawarma. If you have a ready-made shawarma or baharat spice mix, use about 2 tablespoons instead.
  • Olive oil: carries the flavour of the spices and encourages browning.
  • Garlic sauce (toum-style): this quick version uses mayonnaise, yoghurt, garlic and lemon. Tahini sauce is a lovely alternative.
  • Bread and fillings: pita, Arabic khubz, or homemade paratha; plus lettuce, tomato, onion, cucumber and pickled turnips or cucumber pickles.

  • 1/2 tsp turmeric
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp black pepper

Cooking Shawarma Step by Step

Marinate properly

Mix the yoghurt, lemon, garlic, oil, spices and salt into a thick paste, then massage it into the chicken. Leave it in the fridge for at least 2 hours, ideally overnight. Avoid going beyond 24 hours, because the acid in lemon and yoghurt can make the surface of the meat mushy.

Roast hot

Heat the oven to 220°C (200°C fan, 425°F). Spread the thighs flat on a lined tray with space between them; crowding traps steam and stops browning. Roast for 20 to 25 minutes until the chicken reaches an internal temperature of 74°C (165°F) and the edges are charred in places. A sliced red onion on the same tray softens and sweetens nicely.

Rest, slice and crisp

Let the chicken rest for five minutes so the juices settle, then slice it into thin strips. For the real shawarma finish, heat a heavy frying pan with a few drops of oil and toss the strips for two minutes until crisp at the edges. Pour any tray juices over the top.

Assemble

Warm the bread, spread it generously with garlic sauce, add the chicken, vegetables and pickles, then roll tightly. Wrapping the base in foil or baking paper makes it easier to eat and holds everything together, just like at a shawarma stall.

Tips for the Best Chicken Shawarma Recipe

  • Pat the chicken dry before marinating so the paste sticks rather than sliding off.
  • Use the grill setting for the last 3 minutes if your oven does not brown well.
  • Slice across the grain for tender strips.
  • Toast spices whole and grind them for the most aromatic result, if you have time.
  • Balance the sauce: taste the garlic sauce and add more lemon or salt until it is punchy.

Variations and Serving Ideas

This chicken shawarma recipe is easy to adapt to different cooking methods and meals.

  • Stovetop: cut the marinated chicken into strips and cook in a very hot cast-iron pan in batches.
  • Air fryer: cook at 200°C for 15 to 18 minutes, turning halfway, and check the temperature.
  • Barbecue: thread on skewers and grill over medium-high heat for smoky flavour.
  • Shawarma plate: serve over rice or with fries, hummus, salad and garlic sauce instead of wrapping.
  • Pakistani street style: add a squeeze of chilli sauce and shredded cabbage with a little vinegar for that familiar local tang.

Round out the meal with fattoush, tabbouleh, hummus or simple chips seasoned with sumac.

Storage and Make-Ahead

Raw marinated chicken can be frozen in a flat bag for up to three months; thaw in the fridge overnight before cooking. Cooked shawarma keeps in an airtight container in the fridge for up to three days. Reheat in a hot pan until steaming throughout, which also brings back the crispy edges. Store the garlic sauce separately and use it within four days.

Frequently Asked Questions

Can I use chicken breast?

Yes. Reduce the roasting time to about 18 minutes, check for 74°C (165°F) inside, and slice thinly. Thighs remain juicier.

What gives shawarma its flavour?

The combination of cumin, coriander and paprika with warm cinnamon and allspice, plus garlic and lemon. The charring adds the rest.

How long should the chicken marinate?

At least 2 hours, and up to 24 hours. Overnight gives the best balance of flavour and texture.

Can I make the garlic sauce without mayonnaise?

Use thick yoghurt or labneh with grated garlic, lemon and salt. It is lighter and still very tasty.

Which bread is best for shawarma wraps?

Thin Arabic khubz or large, soft pita rolls most easily without cracking. Warm the bread briefly in a dry pan or wrap a stack in foil and heat in the oven for a few minutes so it is soft and pliable. Paratha makes a richer, flakier wrap that many people love.

Bring the Street Stall Home

With a good marinade, a hot oven and a final crisp in the pan, this chicken shawarma recipe brings the street stall to your table. Set out all the fillings on a Friday night and let everyone roll their own.
