Ingredients:

  • 2 cups whole wheat flour
  • 1 cup boiled and mashed potatoes
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala powder
  • Salt, to taste
  • Water, as needed
  • Ghee, as needed

Instructions:

  • In a mixing bowl, combine the whole wheat flour, salt, and water to make a soft dough. Cover the dough and let it rest for 30 minutes.
  • In a pan, heat 1 tablespoon of ghee and add cumin seeds. When the seeds start to crackle, add onion and green chilies. Saute until the onion turns translucent.
  • Add ginger-garlic paste and saute for a minute.
  • Add mashed potatoes, coriander powder, turmeric powder, garam masala powder, and salt. Mix well and cook for 5-7 minutes on medium heat.
  • Let the potato filling cool down to room temperature.
  • Divide the dough into equal-sized balls.
  • Take one ball and roll it out into a small circle.
  • Add 2-3 tablespoons of potato filling in the center of the circle.
  • Bring the edges of the circle together and seal the filling by pressing it together.
  • Roll out the stuffed dough ball gently, making sure the filling does not come out.
  • Heat a griddle or tawa on medium-high heat.
  • Place the rolled-out paratha on the griddle and cook until brown spots appear on one side.
  • Flip the pratha and cook until brown spots appear on the other side.
  • Add ghee on both sides and cook for another minute or two.
  • Repeat the process for the remaining dough balls.

Your delicious allo ka pratha is ready! Serve it hot with a side of yogurt, pickle, or chutney.

  • You can add other vegetables like peas, carrots, or cauliflower to the potato filling.
