Biryani is a classic South Asian dish that is known for its rich flavors and fragrant spices. It is a one-pot dish that is made with layers of rice, meat, and vegetables, and is typically served with raita or a side salad. The dish has its origins in Persia and was introduced to the Indian subcontinent by the Mughal Empire. Since then, it has become a staple in South Asian cuisine and is enjoyed by millions of people all over the world.

To make biryani, you will need the following ingredients:

  • 2 cups basmati rice
  • 1 pound boneless chicken or lamb, cut into bite-sized pieces
  • 1 onion, thinly sliced
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 2 tomatoes, chopped
  • 2 green chilies, chopped
  • 1/2 cup plain yogurt
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup ghee or oil
  • 2 teaspoons biryani masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • Salt to taste
  • Saffron strands (optional)
  • Fried onions (optional)

Directions:

  1. Rinse the rice in cold water and soak it in enough water to cover for at least 30 minutes.
  2. Heat the ghee or oil in a large pot over medium-high heat. Add the sliced onion and cook until it is golden brown.
  3. Add the ginger and garlic paste and cook for a minute until the raw smell disappears.
  4. Add the chopped tomatoes and green chilies and cook for 5-7 minutes until the tomatoes are soft and the mixture has thickened.
  5. Add the biryani masala, turmeric powder, red chili powder, and cumin powder and cook for another minute.
  6. Add the chicken or lamb and cook until it is browned on all sides.
  7. Add the yogurt, cilantro, and mint and mix well.
  8. Drain the rice and add it to the pot, along with 3 cups of water.
  9. Add salt to taste and bring the mixture to a boil.
  10. Reduce the heat to low, cover the pot, and let the biryani simmer for about 20 minutes, or until the rice is cooked through.
  11. If using saffron, soak it in warm water for 5 minutes and then add it to the pot along with the fried onions.
  12. Serve hot with raita or a side salad.
