CHICKEN PULAO

Ingredients:

  • 2 cups of basmati rice
  • 1 pound of chicken, cut into small pieces

  • 1 inch of ginger, grated
  • 2 green chilies, chopped
  • 2 bay leaves
  • 4 cloves
  • 4 cardamom pods

  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • Salt to taste
  • 3 cups of water
  • 3 tbsp oil or ghee

Instructions:

  • Rinse the rice in cold water until the water runs clear. Soak the rice in water for at least 30 minutes.
  • Heat oil or ghee in a large pot over medium heat. Add bay leaves, cloves, cardamom pods, and cinnamon stick. Fry for a minute or until fragrant.
  • Add sliced onions, green chilies, minced garlic, grated ginger, and sauté for 2-3 minutes or until onions become soft and translucent.
  • Add chopped tomatoes, turmeric powder, coriander powder, and garam masala. Mix well and cook for 3-4 minutes until tomatoes become soft and mushy.
  • Add the chicken pieces and stir well, cooking for 5-6 minutes until the chicken is browned and cooked through.
