Soft, creamy and gently spiced, chicken malai boti is the barbecue favourite for people who love flavour but not fierce heat. Boneless chicken pieces soak in a rich marinade of cream, yoghurt, cheese, ginger, garlic and green chilli, then get grilled or baked until lightly charred at the edges and melt-in-the-mouth tender inside.

This home version gives you the restaurant-style result with an ordinary oven, frying pan or charcoal grill. A two-step marinade keeps the chicken juicy, and a quick smoking trick at the end adds the coal-fired aroma that makes malai boti from a good barbecue stall so memorable.

Why You’ll Love It

  • Mild and creamy: perfect for children, guests who avoid spice, and anyone who wants a break from fiery tikka.
  • Incredibly tender: the dairy marinade and gentle cooking keep even chicken breast juicy.
  • Party-ready: easy to scale up for dawats, Eid gatherings or weekend barbecues.
  • Flexible cooking: grill, oven, air fryer or stovetop all work.

Ingredients That Matter

Malai means cream, and the dairy is the heart of this dish. Here is how each ingredient contributes.

  • Boneless chicken: breast is traditional for malai boti and gives clean, white cubes. Thigh is juicier and more forgiving if you worry about dryness.
  • Ginger-garlic paste and lemon juice: the first marinade. They season the meat deeply and begin tenderising.
  • Thick yoghurt: hang ordinary yoghurt in a muslin cloth for 30 minutes to remove excess whey, so the marinade clings rather than drips.
  • Fresh cream: gives richness and that signature silky coating.
  • Cheese: processed cheddar or cream cheese melts into the marinade and adds body. Many Pakistani recipes use a cheese slice or two.
  • Green chillies: finely ground for fresh, gentle heat without red colour.
  • Spices: white pepper, green cardamom, a pinch of nutmeg or mace, and a little garam masala. Avoid red chilli powder, which would change the classic pale colour.
  • Cornflour: helps bind the marinade so it stays on the chicken while cooking.

Making Malai Boti at Home

First marinade

Cut the chicken into roughly 3 to 4 cm cubes so they cook evenly. Mix them with ginger-garlic paste, lemon juice and salt and leave for 20 to 30 minutes. This short step seasons the chicken from the inside before the heavier cream coating goes on.

Creamy second marinade

In a bowl, blend the hung yoghurt, cream, cheese, ground green chillies, white pepper, cardamom, nutmeg, garam masala, cornflour and a little oil until smooth. Coat the chicken thoroughly and refrigerate for at least 4 hours, or up to overnight. The longer rest gives a deeper flavour, but more than 24 hours can make the texture soft.

Cooking the boti

Thread the pieces onto skewers, leaving a small gap between them so heat reaches every side. If using wooden skewers, soak them in water for 30 minutes first.

On a charcoal grill: cook over medium coals, turning often and brushing with butter, for 12 to 15 minutes. The cream catches and chars quickly, so medium heat is better than fierce flames.

In the oven: place skewers on a rack over a tray and bake at 220°C (200°C fan, 425°F) for 15 to 18 minutes, turning once. Finish under the grill for two or three minutes to colour the edges.

Whichever way you cook, the chicken must reach 74°C (165°F) in the centre of the thickest piece.

Add smoky aroma

For the classic dhuaan (smoke) finish, put the cooked boti in a pot with a small steel bowl in the middle. Heat a piece of charcoal over a flame until glowing, place it in the bowl, pour a few drops of oil or ghee on it and cover the pot immediately. Leave for two to three minutes. Do this in a well-ventilated space and never leave burning charcoal unattended.

Tips for the Best Chicken Malai Boti

  • Do not overcook: chicken breast dries out fast. Use a thermometer and pull it as soon as it is cooked through.
  • Baste with butter: brushing melted butter over the boti while cooking keeps it glossy and moist.
  • Keep the colour pale: skip red spices and use white pepper for the authentic creamy look.
  • Sprinkle chaat masala at the end: a light dusting adds tang that balances the richness.

Variations

  • Malai tikka on the bone: use the same marinade on chicken leg pieces and increase cooking time.
  • Malai boti handi: simmer the cooked boti in a creamy onion and cashew gravy for a curry version.
  • Paneer malai tikka: use cubes of paneer with capsicum and onion for a vegetarian option, cooking just until golden.
  • Air fryer malai boti: cook at 200°C for about 12 to 14 minutes, turning halfway.

How to Serve It

Serve chicken malai boti hot with naan, paratha or roomali roti, plus mint chutney or a cool raita. Sliced onion rings tossed with lemon juice and chaat masala are a must. It is also a great filling for paratha rolls: wrap the boti with chutney, onions and a squeeze of lemon. For a barbecue spread, pair it with seekh kebabs, chicken tikka and a fresh salad.

Storage and Reheating

Raw marinated chicken can be frozen for up to two months; thaw overnight in the fridge before cooking. Cooked boti keeps in the fridge for up to three days in an airtight container. Reheat in a covered pan with a teaspoon of butter or a splash of water over low heat until piping hot throughout, or warm in the oven wrapped loosely in foil.

Frequently Asked Questions

Why is my malai boti dry?

Usually it was overcooked, or the pieces were cut too small. Cut larger cubes, use thigh if you prefer, and remove from the heat as soon as the centre reaches 74°C (165°F).

Can I make it without cheese?

Yes. Add an extra tablespoon of cream and a spoon of ground cashews for richness.

Can I cook chicken malai boti on a stovetop?

Yes. Cook the pieces in a non-stick or cast-iron pan with butter over medium heat, turning until golden on all sides and cooked through. Finish with the charcoal smoke for barbecue flavour.
