Most of us do not have a clay tandoor in the back garden, but that should not stop you enjoying smoky, deep-red, tangy tandoori chicken. This oven tandoori chicken recipe uses bone-in pieces, deep slashes and a two-stage yoghurt marinade, then roasts them very hot so the outside chars while the meat stays juicy right to the bone.

The result is close to what you would get from a tandoor: blistered edges, a spicy crust and tender meat that falls off the bone. Everything is done on a single tray, and most of the work is simply waiting for the marinade to do its job.

Why This Method Works

A tandoor reaches extremely high temperatures and cooks with radiant heat from all sides. In a home oven, we recreate that by using the highest setting, raising the chicken on a rack so air circulates, and finishing under the grill for direct top heat. The slashes let the marinade penetrate and help the thick parts cook as fast as the thin ones.

  • No special equipment beyond a baking tray and rack.
  • Bold flavour from a proper spice blend, not just ready-made powder.
  • A great centrepiece for gatherings and easy to multiply.

Key Ingredients

  • Chicken: bone-in, skinless legs and thighs give the juiciest result. Breast quarters work but dry out more easily. Removing the skin lets the marinade reach the meat, as is traditional.
  • Lemon juice, salt and Kashmiri chilli: the first marinade. It seasons the meat deeply.
  • Thick yoghurt: the base of the second marinade. Strain runny yoghurt so the coating sticks.
  • Ginger-garlic paste: freshly made is best.
  • Spices: Kashmiri red chilli for vivid colour with moderate heat, cumin, coriander, garam masala, turmeric and a pinch of crushed dried fenugreek leaves (kasuri methi) for that distinctive aroma.
  • Mustard oil: traditional in many tandoori recipes for its pungent flavour. Heat it until it just smokes, then cool before using to mellow it. Any neutral oil works if you prefer.
  • Colour (optional): restaurants often use food colouring for the bright red look. A little paprika or extra Kashmiri chilli gives a natural deep red instead.

Ingredients

  • 1.2 kg bone-in chicken legs and thighs, skin removed
  • 2 tbsp lemon juice
  • 1 1/2 tsp salt, divided
  • 1 tsp Kashmiri red chilli powder (first marinade)
  • 200 g (3/4 cup) thick hung yoghurt
  • 1 1/2 tbsp ginger-garlic paste
  • 2 tsp Kashmiri red chilli powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1/4 tsp turmeric
  • 1 tsp kasuri methi (dried fenugreek leaves), crushed
  • 2 tbsp mustard oil or vegetable oil
  • 20 g (1 1/2 tbsp) butter, melted, for basting
  • Chaat masala, lemon wedges and sliced onions, to serve

Method

  1. Cut 2 to 3 deep slashes in each chicken piece down to the bone.
  2. Rub with lemon juice, 1/2 tsp salt and 1 tsp Kashmiri chilli and rest for 20 to 30 minutes.
  3. Mix the yoghurt, ginger-garlic paste, remaining spices, remaining salt, kasuri methi and oil into a thick paste.
  4. Coat the chicken well, pushing the marinade into the cuts. Refrigerate for at least 6 hours or overnight.
  5. Heat the oven to 240 to 250°C (220 to 230°C fan, 475°F). Arrange the chicken on a rack over a lined tray.
  6. Roast for 25 to 30 minutes, turning once and basting with butter halfway.
  7. Grill for 3 to 5 minutes until charred in spots, and check the thickest piece reaches at least 74°C (165°F).
  8. Optional: smoke with a hot charcoal and ghee in a covered pot for 3 minutes.
  9. Sprinkle with chaat masala and serve with onions, lemon and mint chutney.

How to Make Tandoori Chicken in the Oven

Score the chicken

Make two or three deep cuts, down to the bone, across each piece. This is not optional: the slashes let flavour in and help the meat cook evenly at high heat.

Two marinades

Rub the chicken with lemon juice, salt and a little chilli and leave for 20 to 30 minutes. Then mix the yoghurt with ginger-garlic paste, spices, kasuri methi and oil into a thick paste and coat each piece, working it into the cuts. Refrigerate for at least 6 hours and ideally overnight. This long rest is what gives the deep flavour and tender texture.

Roast very hot

Take the chicken out of the fridge 20 minutes before cooking. Heat the oven to its maximum, ideally 240 to 250°C (220 to 230°C fan, 475°F). Set a wire rack over a foil-lined tray and arrange the pieces with space between them. Roast for 25 to 30 minutes, turning once, and brush with a little melted butter or oil halfway through.

Char under the grill

Switch to the grill (broiler) for the last 3 to 5 minutes to blister the surface. Watch closely: the line between charred and burnt is short. Check the thickest piece near the bone with a thermometer; it must read at least 74°C (165°F). Bone-in leg meat is at its most tender closer to 80°C (175°F).

Optional smoky finish

To add a tandoor-like smoky taste, place the cooked chicken in a large pot with a small steel bowl. Put a glowing piece of charcoal in the bowl, drizzle with a few drops of ghee, cover and leave for three minutes. Do this in a ventilated area.

Tips for Better Results

  • Thick marinade wins: watery marinade slides off and steams the chicken. Hung yoghurt keeps it on.
  • Room-temperature chicken: cooks more evenly than meat straight from the fridge.
  • Do not crowd the tray: gaps between pieces mean roasting rather than stewing.
  • Finish with butter and chaat masala: brush with melted butter and dust with chaat masala as it comes out of the oven.

Variations

Once you master this oven tandoori chicken, use the same marinade for other cuts and cooking methods.

  • Tandoori drumsticks: perfect for parties and quick to eat by hand.
  • Whole tandoori chicken: use a small whole bird, slash deeply and roast at slightly lower heat for longer, checking the thigh temperature.
  • Air fryer tandoori: cook at 200°C for 20 to 25 minutes, turning halfway.
  • Tandoori chicken tikka: use boneless cubes on skewers and reduce the cooking time to 12 to 15 minutes.
  • Charcoal grill: cook over medium-hot coals, turning often, for authentic smoke.

Serving and Storage

Serve hot with sliced onions, lemon wedges, mint chutney and warm naan or roti. A cucumber raita and a simple salad complete the plate. Leftovers are excellent shredded into wraps, sandwiches or a quick chicken tikka masala.

Refrigerate cooked chicken within two hours and use within three days. Reheat in a 180°C (350°F) oven, loosely covered with foil, until piping hot. Raw marinated chicken can be frozen for up to two months; thaw in the fridge before roasting.

Frequently Asked Questions

Can I make oven tandoori chicken without food colouring?

Yes. Kashmiri chilli and a little paprika give a natural deep red-orange colour. The flavour is exactly the same.

How long should I marinate tandoori chicken?

Aim for at least 6 hours. Overnight is best. Avoid going beyond 24 hours, as the acid can make the surface mushy.

Why is my chicken not charring?

The oven may not be hot enough, the marinade may be too wet, or the pieces are too close together. Use the grill at the end for direct heat.

Is it spicy?

Kashmiri chilli is fairly mild. Increase the heat with a spoon of hot red chilli powder or reduce the chilli for children.
